What we’ve been up to at So CupCakeable

It’s been a while but I’ve been very, very busy. I finished my deal with Groupon. It ran the end of September and I’ve been busy baking cupcakes to fill my end of the bargain. I have been busy delivering as well which is something that I was not planning on doing originally, but it’s been working out really great. The customers seem to love the convenience of delivery. Recently, I also had my hand at making some Halloween cupcakes, and I must say, they turned out great!

On to what’s new. I am getting ready to reveal which holiday flavors I will be doing this year, so make sure to check back often. I am planning on revealing those flavors within the first week of November. I am very excited to be adding some new flavors to the menu and can’t wait for the holidays. Yum!

Diaper Cupcakes!

Something different. A nice treat, but not edible! This past weekend, I attended my husband’s coworker’s baby shower. Since my specialty is cupcakes, I decided to make her some diaper cupcakes.

The ingredients are:
diapers (of course)
baby socks

I tied them up with ribbon and then also put them in a cupcake box, topped with a nice ribbon and bow. I attached the pictures below, so check it out and let me know what you think. Yum! Lol!




My latest project: So Lemony!

Hopefully you are enjoying this journey with me and my cupcake business. A couple of weekends ago I was requested to make some so lemony cupcakes. As always I was up for the challenge. They were for a church function so I did a little bit of a twist on the decorations. I baked the cupcakes in a grass printed liner and placed small yellow flowers made from royal icing on top. They were a hit. One of my customers referred to the cupcake as “lemon sunshine in her mouth!” (Hate to toot my own horn, but “toot toot!”) They raved over the moistness in the cake as well as the light and fluffy texture of the icing. All in all, it went very well and I believe the cupcakes turned out great! Check back for more updates soon! Yum!


So CupCakeable tasting party!

Okay I’m late again, but I have a pretty cool update. I did a cupcake tasting party and it went really well. I got some great feedback for the cupcakes that I made. For the party, I prepared the so vanilla, so lemony, so velvety, so decadent, so s’mores, so vanilla sundae, and so key limey cupcakes. Based on the results of the tasting party I tweaked the recipe and I believe this is it. Everyone fell in love with the key limey cupcakes and were fighting over who was going to be able to take the rest home. I am posting some pictures from the party below. Great food, great people, great party, Yum!

Last weekend, Butter Rum Cupcakes!

So, what have I been up to lately? Well, this past weekend I did not update the blog because we went out of town to visit some family and of course, I made them some cupcakes. I actually made some butter rum cupcakes with a buttercream icing and the funny thing is I did not have any of my tools to do anything. I had to kind of pull all of the recipes from somewhere in the back of my brain. I have no idea how I actually was able to remember all of that stuff. I had to improvise on measurements because there were no measuring cups or spoons. No decorating bags or icing tips, so ziploc bags it was. The classic swirl turned out nice, and surprisingly the cupcakes turned out really good, too! What can I say? I’m a genius (a professional genius at that)! Put me in the kitchen and I make magic happen! Lol!

Butter rum was actually not a flavor that I planned on making, but everyone seemed to like the cupcakes and I can definitely add it to my resume. So, the recipe for a nice relaxing weekend calls for: family and friends, nice weather, fresh air, and some delicious cupcakes. Yum!

Happy 4th of July!

Hello everyone hope everyone had a great 4th of July. I did make 4th of July cupcakes and they turned out really and really cute. I wanted to stick with the theme of red white and blue, so I did the red velvet cupcake with whipped white and blue icing. The other cupcakes are a vanilla cupcake with a vanilla buttercream icing topped with red white and blue sprinkles. The pictures are posted below. Hope you enjoy. Yum!



Yellow Cupcakes with Chocolate Icing, Finally!

You are going to be very proud of me. I finally made the yellow cupcakes with the chocolate icing and also I made some lemon cupcakes with lemon icing. The pictures are posted below for you to see.They were very good. The yellow cupcakes were very moist and had a nice butter flavor to them. Everyone really enjoyed them. The lemon cupcakes were nice and lemony. Check back soon because I will be doing some fourth of July cupcakes for this upcoming holiday! Yum!

Okay, so I know I said I was working on the yellow cupcakes with the chocolate icing but things happened and I never got a chance to do it. I’ll probably end up doing it this weekend, however, I did want to post some pictures of what I was actually working on. I was making some cupcakes for a party for a family friend. Below are the pictures of the so decadent, so velvety, and so vanilla cupcakes that i made for the party (they are the mini’s). I think they turned out very good. The party had a good turnout, and it seems like everyone enjoyed them! Yum!

Operation Decorate!

New recipe and new mixer

So, a lot has been going on since my last post. I think I finally have the base recipe for my cupcakes, and so far they taste amazing. After several attempts at altering recipe after recipe and making several trial batches of cupcakes, I think I have settled on this great tasting concoction. I was having a little difficulty keeping the cupcakes light and fluffy, but I think I may have solved the issue.

Also, my new stand mixer came in. I’m so excited to use it because that means it will take less time to mix up my batches of these wonderful tasting little cakes. So, next up is my yellow cupcake with chocolate icing. I will post pictures as soon as they are done, so check back soon.
